Vineyard Plot selection from 60-year-old, low-yield vines Organic wine. Tilling of soils and manual harvest, with sorting on the plot.
Winemaking & Ageing Pressing of whole bunches in a pneumatic press and selection of musts. Gentle cold settling. Alcoholic fermentation with natural yeasts, followed by malolactic fermentation. Aged 24 months on lees, in underground vats.
Food-wine pairings White meats, fish, cheese, exotic and spicy cuisine.

This Muscadet comes from old vines planted on bedrock of gneiss, opposite the village of Saint Fiacre. Made the Burgundian way in salute to the origins of Muscadet’s unique grape variety Melon, the wine is aged for two years on lees. This finely crafted Muscadet is a rich and complex wine with notes of preserved lemon and salted-butter caramel. Ideal for ageing and pairing with food.
