Vineyard Plot selection from 70-year-old, low-yield vines. Organic wine. Tilling of soils and manual harvest, with sorting on the plot.
Winemaking & Ageing Pressing of whole bunches in a pneumatic press and selection of musts. Gentle cold settling. Fermentation with natural yeasts. Aged 36 months on lees, in underground vats, with regular stirring of lees.
Food-Wine Pairings Lobster, fish with beurre blanc sauce, scallops, shoulder of lamb confit.

Description:
The vineyard slope of L’Aulnaye overlooks the confluence of the rivers Sèvre and Maine, in the geographical and historical heart of the appellation, offering one of the most sweeping views over the Nantes wine region. This Muscadet comes from our oldest vines growing on bedrock of gneiss. Three years of ageing on lees make this a long-keeping, gastronomy wine. It combines freshness and persistence of flavour, with smokiness and notes of citrus, fennel and anise.
